Place sliced vegetables in a large bowl or on large tray, Drizzle with olive oil and coat veggies using your hands.
Sprinkle with Italian seasoning and grill 2 minutes per side.
Layer the bread with eggplant, zucchini, carrots and mushroom.
Top with grilled steak add some pesto to the top bun and place it on top of the sandwich.
Plate as pictured and serve with French fries or house salad
